Jersey Mike’s is a national franchise of sub shops, and has been serving subs on gluten-free rolls for a few years now. They will happily change their gloves and prepare your sub on a fresh cutting board, using fresh utensils and condiments. Their individually wrapped Udi’s rolls come in two sizes  regular and giant ( too small, and too big, if you ask us!). Jersey Mike’s locations are not dedicated gluten free, but do boast a reputation for being super careful when it comes to cross-contamination. Be sure to inform the counter person of your dietary needs.
We recently visited our local Jersey Mike’s for takeout. Just for kicks, we ordered the giant sized sub, which was certainly giant. It was really fun, really good, and we felt great after.
