This bread pudding dessert calls for gluten-free cinnamon raisin bread. You can use regular gluten-free bread if you like, but the cinnamon raisin does add a little extra kick!Â
Bread Pudding ingredients
- 1 tablespoon Apple Pie Spice
- 3.5 cups of coconut milk or almond milk
- 2 apples, peeled and cut into 1/2-inch cubes
- 3 eggs, lightly beaten
- 3/4 cup granulated sugar
- 1 tablespoon Apple Pie Spice
- 8 cups gluten-free cinnamon raisin bread, chopped in 1” cubes (about 16 slices)
- 1 tablespoon Pure Vanilla Extract
Crumble Topping ingredients
- 1 teaspoon Apple Pie Spice
- 3/4 cup firmly packed light brown sugar
- 3/4 cup gluten-free rolled oats
- 1/4 cup (1/2 stick) cold butter, cut into pieces (can sub in dairy-free butter)
Instructions
- Preheat oven to 350°F.
- pour coconut or almond milk into large bowl.
- Add apple pie spice, eggs, vanilla and granulated sugar, mix until well blended and smooth
- Add bread cubes and apples; coat well.
- Pour into greased 13×9-inch baking dish. Let stand 10 minutes.
- For the Crumble Topping, mix brown sugar, oats and apple pie spice in medium bowl.
- Cut in butter with pastry blender or 2 knives until coarse crumbs form. Sprinkle evenly over top.
- Bake 50 minutes or until apples are tender and topping is golden brown.
Serve warm with dairy or non-dairy ice cream or whipped cream!
