Ethiopian Cuisine – Exotically Gluten Free!

If you’ve ever had Ethiopian cuisine, you know just how gluten-friendly it is. Originating in Ethiopia, Eritrea and Somalia, the basis of Ethiopian cuisine is Injera, a sourdough-risen bread made with Teff, an ancient grain that’s naturally gluten free. Traditionally, an entire platter is covered with the thin, spongy bread, with various vegetable and meat stews placed directly it. Groups gather around the platter, tearing bits of injera, using them as utensils to eat the stews and other items. Although authentic Injera contains only Teff, it is occasionally supplemented with barley or wheat, so always ask before you eat!  Below are a few of our Ethiopian picks from around the region. We hear that it’s best to call ahead to ensure that they’ll have plenty of injera on hand!
