Gluten-Free Irish Soda Bread Recipe
Taylor Grant Greenberg, food blogger and one of Gluten-Free Connecticut’s local contributors, has done our gluten-free Irish soda bread research for us! Taking the best parts of all the her favorite recipes, she’s created the ultimate gluten-free Irish soda bread. Read on, bake on, and enjoy!
Ingredients
3 cups of gluten free flour
1 tbsp gar gum
1/4 cup of sugar, plus more for dusting
1 tsp baking soda
1 tbsp baking powder
1 cup of raisins
1 cup of almond milk
2 tbsp lemon juice
1 stick of cold butter, cut into cubes
1 egg
Directions
- Combine the dry ingredients in a large mixing bowl.
- Combine the almond milk and lemon juice, let sit for 5 minutes.
- Slowly mix the cubed butter into the dry ingredients, and then add the raisins.
- Add the egg, followed by the almond milk-lemon juice mixture.
- Mix until a sticky dough forms.
- Place on a sheet of parchment paper and form into a round loaf, slice an “x” in the middle of the dough, and sprinkle with a small amount of sugar.
- Bake in a preheated 350 degree oven for 30-40 minutes, until a skewer inserted comes out clean and bread is golden brown.
- Allow to cool for an hour before eating.
