Gluten-Free and Vegan Hot Chocolate

Winter’s coming and we love hot chocolate. We tried lots of GF/vegan hot chocolate recipes and found this one from Minimalist Baker to be our favorite. Just toss it all in a pot, heat it up and then yum!  You can substitute unsweetened chocolate and coconut sugar to make it paleo, and you can add vanilla or peppermint extract for an extra punch.

Note that there are no quantities for this recipe – we mixed ours like this, and it was so good, but you can adjust your own for taste! 


1 Tb cocoa powder
1 cup almond milk (soy or any other non-dairy milk works)
1 Tb coconut sugar (or any kind of sweetner of your choice)
A few non-dairy chocolate chips
Small splash of vanilla extract

Toss it all in a pot and warm it up – then enjoy!
