Melissa Cole’s Flourless Chocolate Cake Recipe
(adapted from Skinny Taste)
6 oz. 60% Ghiradelli chocolate (can be any percentage, depending on taste)
1/4 cup pumpkin puree
1 1/2 tablespoon pure maple syrup
1 teaspoon vanilla extract
3 egg whites
1/8 teaspoon salt
- Preheat oven to 350.
- In microwave, melt chocolate in medium microwavable bowl in 45 second intervals. Allow to cool for a few minutes.
- Add pumpkin puree to the melted chocolate along with the vanilla, one whole egg and maple syrup. Mix well.
- In a separate bowl, beat the egg whites with a hand mixer until soft peaks form. Fold them into the chocolate mixture and add salt.
- Spoon 1/4 cup of the mixture intro ramekins and bake until the cakes rise, abut 15 minutes. Serve immediately for a softer cake, or let cool first for a more dense consistency. Both delicious!
