Melissa Cole’s Gluten-Free Paleo Pancake Recipe!

We love when Melissa Cole from WFSB contributes a recipe, and this one is no different. Next time the kids ask for pancakes, give them these – they’ll love ’em and so will you! 
Ingredients
1 Cup Bob’s Red Mill Paleo Flour
3/4 tsp. Baking Soda
1/4 tsp. Salt
2 eggs
1/3 Cup Dairy Free Milk
1 tbsp. Melted Coconut Oil
2 tsp Honey or Maple Syrup
1/2 tsp Vanilla Extract
1 tsp Cinnamon
1 small zucchini, shredded
Directions
Follow the directions on the Bob’s Red Mill box, adding the cinnamon to the dry ingredients. Add the grated zucchini at the end.
This recipe can also be doubled and is adapted from Bob’s Red Mill.
