Nutty Bunny is the kind of gluten-free/dairy-free ice cream that you’d make yourself if you had the ingredients, equipment, time, and culinary expertise. Fortunately for us, Pamela Aflalo has all of these. From inside her dedicated gluten-free and dairy-free facility in Stamford, she makes four delicious flavors(soon to be five), using all organic, vegan, non GMO ingredients, and no artificial sweeteners. Just take a look at the ingredient list for our favorite flavor, Orange Blossom: Cashews, coconut milk, maple syrup, almonds, purified water, coconut oil, pure orange extract, pure vanilla extract, orange rind, turmeric, sea salt, vanilla powder. Pamela uses organic maple syrup to sweeten all of her flavors, which is quite uncommon for commercial brands, and a very welcome (and healthier) change.
Pamela’s venture began about 6 years ago when her daughter Sophie was diagnosed with a milk allergy. Sophie really missed ice cream, but Pamela was unimpressed with both the flavor and ingredients of store-bought dairy-free desserts. So, she decided to create one. A trained culinary grad and researcher, she developed a recipe that contained 100% authentic ingredients, and met with Sophie’s approval. After much encouragement from friends and family, Pamela decided to start selling her new product, and has been busy ever since. Nutty Bunny is Sophie’s nickname, fitting for such a genuine, healthy, and delicious treat!
