Peace of Mind Baking Company is a dedicated gluten-free gem nestled in the mountains of Conway, New Hampshire. Owner Nancy Plante, who has celiac disease herself, started the company in her home in 2007. Because many people with celiac disease suffer from other food allergies as well, the entire bakery is also 100% vegan and free from soy, peanut, eggs, and dairy.
Offerings include muffins, cookies, donuts, all kinds of whoopie pies, and pizza crusts. In fact, if you’ve ever had a gluten-free pizza at Flatbread Company, you had it on a Peace of Mind crust. The new Magic 8 Donuts are particularly exciting, because they’re free from the top 8 allergens: gluten, dairy, egg, soy, peanuts, tree nuts, fish, and shellfish. And they are decadent.
The fast-growing bakery is located in a business park, with a drive-up retail window installed this past spring. This is particularly exciting, because until then, Peace of Mind sold only wholesale. Business is booming, and Nancy hinted that even more exciting things are in the works.
