There’s a dedicated gluten-free sandwich shop opening in Kittery, Maine, and we’re not mad about it. Toast will be operated by founder Nina Holland, whose passion is “just nourishing humans.”
Without a formal cooking or baking background, Nina, who has multiple food allergies herself, used her natural baking skills to develop the ultimate gluten-free sourdough bread recipe. She started selling a few loaves and bagels here and there, increasing to hundreds per month, both hand delivered and picked up from meeting places up and down the seacoast. Requests were even coming in from outside the region. Nina knew it was time to expand.
The new shop, located at 7 Shapleigh Road, will be takeout only, with a full list of specialty sandwiches, including some named after her daughters. There will also be bagels for sale in flavors like blueberry, apple cinnamon, garlic & rosemary as well as loaves of bread and maybe a coffee station.
Nina is delighted to be finally settling her business into its new home, which will be one of the only dedicated gluten-free sandwich places in New England. We know firsthand how tough it can be for the celiac and gluten-free communities to grab sandwiches on the go, which makes us extra grateful. Oh, and your gluten-eating friends/family won’t know the difference.
