Egg & dairy-free option: This product can be made egg free by eliminating the egg white and replacing with 1 Tbsp. flax seed added to 1/4 cup water and simmered on the stove until it becomes thick. Or add 1-2 Tbsp. honey to act as the binder. The product can also be made dairy free by using Spectrum shortening.

Want to buy the whole darn pie? Our favorite is The Maine Pie Company, which is dedicated GF, and can be found in your grocer’s freezer. They’re not cheap, but they’re oh-so-worth it.

 

Flakiest Gluten-Free Pie Crust Recipe
Ingredients:
  • 1.5 cups all purpose GF flour (we like Bob’s Red Mill) + some for sprinkling
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon xanthan gum (unless your flour blends already has it)
  • 6 tablespoons unsalted butter, chopped into chunky pieces and chilled
  • 1/2 cup sour cream (preferably not low fat)
  • Ice water

*Can sub in non-dairy butter and yogurt, with almost-as-good results!

Instructions
  1. In a large bowl, add flour, baking powder, salt, xanthan gum. Mix well.
  2. Add chilled and chopped butter chunks and toss in the flour mixture. Flatten each butter chunk between your fingers.
  3. Add sour cream and mix. Dough will be crumbly.
  4. Knead with your hands until it starts to come together. Add ice water only if it’s too crumbly, and in tiny amounts.
  5. Turn dough onto a sheet of plastic wrap and shape into a disk. It will still seem crumbly. Refrigerate 30 mins.
  6. Preheat oven to 375F.
  7. Grease 9 inch pie plate
  8. Sprinkle flour on a flat surface or parchment paper and on it, turn out the refrigerated dough.
  9. Roll dough into a rectangle, sprinkling lightly with more flour as needed. Fold the rectangle in half and roll out again. Repeat 2 more times.
  10. Roll out the dough into a 12″ diameter circle, about 3/8 inch thick. Cut the edges off it you prefer. To lift the dough, wrap it  around a rolling pin and then place it inside the pie plate. Tuck excess under, and pinch the edges. Cover and chill until firm, at least 30 minutes and up to a few days. Can freeze it too.
  11. Unwrap refrigerated crust, and poke lots of holes in bottom with a fork. Place parchment paper over the crust with pie weights or beans in the center to hold it down. Bake about 10 mins, until lightly brown on the edges. Remove from oven and cool completely.
  12. Add your favorite filling, top with another crust or topping, and bake according to your recipe directions. Enjoy!
