In the span of just a few months, Rhode Island lost and gained a dedicated gluten-free bakery. Sans Gluten, located in Johnston, sadly closed its doors over the summer. Shortly after, and to the delight of gluten-free folks everywhere, Three Wishes Bakery moved in.
Laura Kirshkaln, who owns Three Wishes with her husband Brian, transitioned to a gluten-free lifestyle after an autoimmune diagnosis five years ago. In 2020, she and Brian, a professionally trained chef with a seasoned restaurant background, decided to combine forces to launch a bakery.
They started out at Hope and Main, a food business incubator program in Warren, RI. They worked tirelessly perfecting recipes for gluten-free goodies, selling them at farmer’s markets in Massachusetts and Rhode Island.
When the Johnston space became available (to the disappointment of many), Laura and Brian jumped on the opportunity to finally open a brick and mortar shop.
They now sell everything from churros, cookies, cupcakes, and custom cakes, to savory items like focaccia bread and handmade gnocchi. They’re open from Wednesday to Sunday, and super excited to bring gluten-free goodness to Rhode Island and beyond.
