When it comes to gluten free eating in Fairfield, Brick + Wood is solid. They offer a homemade gluten free and GMO-free pizza crust, which is pretty cool.  They also prepare your pizza in a clean area, and bake it on a dedicated gluten free pan.  They bake all pizzas in shared ovens, but they do their best to avoid cross-contamination. Oh, and if you aren’t totally stuffed after your pizza, they have a flourless chocolate cake with ice cream and whipped cream, and a gluten free bread pudding made with their own homemade gluten free bread.
